Alpha Chymotrypsin is a digestive enzyme found in pancreatic juice that breaks down proteins and polypeptides. It performs this role by cleaving peptide amine bonds when activated by trypsin from chymotrypsinogen to chymotrypsin. Chymotrypsin induces its own activation by further cleaving itself to alpha chymotrypsin, a more active and stable form.
